Bacon Waffles

Ingredients :
8 bacon
200gm grated cheddar cheese
2 1/4 teaspoon baking powder
kosher salt as required
2 cup buttermilk
1/2 cup virgin olive oil
2 cup all purpose flour
1/2 teaspoon baking soda
powdered black pepper as required
10 eggs
6 tablespoon melted butter
How to make
Step 1
To prepare this bacon recipe, put a saucepan on medium flame and heat oil in it. When the oil is hot enough, add bacon slices in the pan. Cook the bacon slices until they are crispy and brown in colour. Once cooked, put the bacon slices aside and place on a paper napkin to soak the extra oil. When they are warm enough to hold, chop the slices into bite size pieces.
Step 2
Now, prepare the batter for the waffles. Take a large bowl and stir together baking powder, all purpose flour, baking soda, salt and black pepper. In another bowl, crack 2 eggs and mix with buttermilk and 2 tablespoons of butter. Combine well all the ingredients of both the bowls to make a smooth batter. Next, add grated cheddar cheese and cooked bacon pieces to the batter and mix well.
Step 3
Then, heat the waffle maker and grease it with some butter. Add the waffle batter, which has bacon pieces in it. Cook the waffles to golden colour in colour. Repeat the process to cook more such waffles.
Step 4
Meanwhile, put a pan on medium flame and heat a tablespoon of oil in it. Crack open the remaining eggs in the greased pan until the whites are set and yellows are still soft.
Step 5
When the waffles are done, place them in a plate and then put a layer of the cooked eggs on top of each waffle along with the bacon pieces. Serve immediately.
