Ingredients :
3 eggs
2 green chilli
4 large tomato
2 teaspoon cumin seeds
1 teaspoon red chilli powder
1 handful coriander leaves
2 cloves garlic
1 large onion
2 tablespoon vegetable oil
1 teaspoon turmeric
50gm jaggery
How to make
Step 1
To prepare this delicious dish, start by finely chopping the onions and dice the tomatoes (or you can use about 800 g of tomato puree). Then, chop up the green chilies, garlic cloves and coriander leaves, and set aside.
Step 2
Next, take a pan on medium flame and heat oil in it. When the oil is heated, add the onions and fry them till they start to turn transparent. Then, add the green chilies, garlic and cumin to the pan and fry them together till the onions turns brown.

When the onions are done, put the diced tomato in the pan and add the turmeric, red chili powder, and jaggery (gur). Then, stir the mixture and let it simmer till it becomes quite thick. Let the moisture from the tomatoes evaporate completely.
Step 4
Now, with the back of a spoon, flatten out the thick mixture and crack the eggs over it. Turn the flame to low and cover the pan with a lid. Then, let the eggs cook for about 5 minutes.
Step 5
When the eggs are done, garnish with coriander leaves and serve the Tomato per Eedu with rutis to enjoy!
