Tomato quiche
Ingredients:
1 cup chopped onion
2 tblsp butter
4 large tomatoes (peeled, seeded, chopped and drained)
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried thyme
2 cups Monterey Jack cheese
1 unbaked pastry shell (10 inches)
4 Eggs
11/2 cup cream
Method:
In a large pan, saute onion in butter until tender. Add the tomatoes, salt, pepper and thyme. Cook over medium heat until liquid is almost evaporated. Remove from the heat.
Sprinkle 1-cup cheese into bottom of a pie shell. Cover with tomato mixture; sprinkle with remaining cheese.
In a small bowl, beat eggs until foamy. Beat in the cream. Pour the mixture into pie shell.
Bake at about 425° for 10 minutes. Reduce heat to 325°; and the bake for 40 minutes or until top begins to turn brown and a knife inserted near the center comes out clean. Let it stand 10 minutes before cutting. Your quiche is ready to serve.

Rouille

Ingredients:
3 egg yolks
1/4 teaspoon of mustard
4 garlic cloves, chopped
1 tsp white wine
1 tsp saffron
1/2 tsp cayenne pepper
1 1/2 cups of olive oil
1 tsp lemon juice
Salt (as per taste)
Procedure:
Place the egg yolks, mustard, and garlic in a food processor and blend all the ingredients until it turns into a puree.
Add the olive oil to the puree while still blending, until you have a thick and smooth texture. Place the saffron in the warm white wine and add to the mixture.
Transfer the puree to a serving bowl and taste, season with some salt and 1 tablespoon of lemon juice.
Serve as a dip with crackers or it can accompany French fish soup.

Tofu French toast
Ingredients:
1 ½ cup soft or medium tofu
1 cup water
4 tsp oil
1 pinch salt
1 tsp vanilla extract
3 tsp sugar
8 slices whole-wheat bread
Margarine or oil for frying
Procedure:
Put the tofu, water, oil, salt, vanilla extract and sugar in blender/ food processor and blend thoroughly.
Pour the mixture into a shallow bowl and dip in the slices of bread.
Heat the margarine or oil in a skillet and fry the dipped bread over a moderate heat until browned on both sides.
Serve with maple syrup or jam. Or, serve with a mixture of sugar and cinnamon powder.
