Lamb Rosemary Honey Mustard Roast

Ingredients :
Honey – 3 tablespoon
Fresh rosemary – 2 tablespoon
Dijon Mustard – 2 tablespoon (special mustard paste with white wine/vinegar)
Black pepper – freshly ground
Lemon zest – 1 teaspoon
Garlic – 3 cloves
A whole leg of lamb (Around 2 kgs)
Salt to taste
Olive oil to drizzle
Directions:
Marinate the leg of lamb with a mix of all the ingredients except salt and oil.
Rosemary, Honey, mustard, pepper, Lemon zest should be well mixed before applying on the whole leg.
Allow it to marinate for at least one whole night.
Pre heat your over to 230 degrees.
Place your lamb on the rack.
Sprinkle some salt and a little oil and start the roast.
Keep it in the oven for one hour at 70 degrees.
Let the meat rest for ten minutes before taking it out of the oven.
Carve the meat and serve.
