Ingredients :
Mochiko (sweet rice flour)
o 3 tbsp Granulated sugar
o 2 tbsp Black sesame seeds
o 1 Cup hot water
o 1/4 Cup soy sauce
o 1/4 Cup mirin
Procedure:
o Mix rice flour with sugar and add hot water. Knead to a dough.
o Roll the dough into balls and then steam.
o Knead the dough once more and roll into large coils.
o At this point, any integrated flavorings (here sesame seeds) are added.
o Roll out the flavored dough into thin sheets and then cut into any shape you desire (traditionally circular).
o Lay the cut dough on straw mats and dry in the sun.
o Season them with soy sauce and mirin blend.
o Grill the crackers. Serve. n
